i use my microwave for any
of food preservation?
There are two things that are
very easily done in the microwave
-- blanching vegetables for freez-
ing and making fruit jams, pre-
serves and syrups. It's also quite
useful in cooking down fruits for
pie filling to be canned.
To blanch vegetables in the
microwaver:
Prepare about 1 pound or 1 quart
of vegetables at a time. Place them
in a casserole dish that has a cover.
Add water (1" to to 1/2 cup). Do not
add salt. Process about one-third of
the time usually needed for cooking
fresh vegetables for the table. See
your microwave booklet for ap-
proximate times. Times usually
range from 2 minutes for diced or
small vegetables to 5 minutes for
large pieces like cauliflower.
Cook on high setting for half the
time, stir, turn the casserole one-
quarter turn and process the rest of
the time. Let stand on the counter
with lid on for about 5 minutes.
This allows for carry over cooking,
a very important feature in micro-
wave cooking.
Then plunge into ice water or
place casserole in cool water to cool
the vegetables as quickly as pos-
sible.
Package in freezer containers
and label. One pint containers are
about equivalent to the 10 oz.
commercially frozen packages. Re-
heating times for commercial veg-
etables from the microwave booklet
can then be used easily.
There are several jam and jelly
recipes developed especially fo r the
microwave. You need to work with
small batches and use a very large
casserole to contain the boiling up.
Be sure to use pot holders
because sugar mixtures get very
hot. When pectin is added after
heating, add gradually and stir it
well.
Here's a peach jam recipe
adapted to the microwave:
FRESH PEACH JAM
4 cups peeled, pitted and finely
chopped peaches
2 tablespoons lemon juice
i box (13A oz.) powdered fruit
pectin
5t/2 cups sugar
Place peaches in 3-qt. casserole.
Add lemon juice and pectin to fruit
stirring well. Cover. Place in mi-
crowave oven and cook (high pow-
er) 8 to 10 rqinutes, or until mixture
is at a full rolling boil. Stir.

Add sugar to boiling mixture and
stir well. Return uncovered to
microwave oven and cook mixture 7
to 9 minutes, stirring after 4 min-
utes, until mixture reaches a full
rolling boil. Then, time for 1 more
minute of boiling. Remove from
oven. Skim off foam and stir jam
about 5 minutes before ladling into
prepared glasses. Seal.
Makes about 7 cups,
